Pickled! Makkelijk te maken pickles
Pasgeleden zag ik iet op tv over het inmaken van groenten, en dat leek me helemaal geweldig. Mijn eigengemaakte pickles! Alleen, toen ik ging zoeken naar recepten kwam ik van alles en nog wat tegen. Uiteindelijk heb ik mijn eigen recept gemaakt. Ik wilde een frisse pickle, die ik voor alle soorten groenten kan gebruiken en die een aangename zure smaak heeft. Niet te scherp en niet TE zuur.
Het resultaat is geweldig, en je kunt het bij van alles en nog gebruiken, door een salade, bij vlees of vis of bij een aperitief waarbij je het gewoon op een prikkertje doet met een stukje kaas of worst bijvoorbeeld.
Belangrijk is dat je het echt maar heel kort kookt want dan hou je tenminste een pickle met een bite!

Hoeveel personen: +/- 2 weckpotten van 0,75 l
Bereidingstijd: 30 minuten
Kooktijd: 15 minute
Wat heb je nodig:
1 liter witte azijn (ik gebruik biologische azijn)
2 eetlepels zeezout
100 g suiker
200 ml water
1 kg gemengde groenten (elke combi die jou lekker lijkt, bijv lenteuitjes, radijsjes, wortels en selderij)
1 kopje olijfolie
Optioneel 1/2 kopje basilicum of andere kruiden olie
10 gemengde peperkorrels (4 seizoenen) per pot
5 jeneverbessen per pot
Eventuele extra kruiden per pot (verse rozemarijn of tijm etc)
Optioneel: 1 theelepel komijnzaad per pot
Optioneel :1 theelepel knoflookvlokken of een teentje verse knoflook in stukjes per pot
En verder:
Schone weckpotten of potten met draaideksel. Neem de wat grotere potten, of potten die mooi in de keuken staan, dan heb je ook nog een decoratief element hiermee!
Hoe maak je het:
Maak de verschillende groenten schoon. Snij ze in dunne plakjes (van ongeveer 1/2 tot 1 cm dik), champignons in vieren, etc.
Doe de kruiden en specerijen in de potten.
Doe de azijn, het zeezout, de suiker en het water in de pan en breng het aan de kook. Op het moment dat het kookt (grote bubbels) , doe je alle groenten er in een keer bij, en brengt het opnieuw aan de kook. Kook niet meer dan 1 minuut! Anders gaat de knapperigheid er vanaf en worden de groenten zacht. Ben je niet zeker, proef dan even, want je wilt de bite niet kwijt 😉
Doe in een aparte kom een laagje olijfolie (en andere kruidenolie als je dit wilt) met wat kruiden naar keus. Haal de groenten uit de pan met een schuimspaan en mix ze even kort door het olijfolie mengsel.
Doe het mengsel (samen met het olijfoliemengsel) in de potten tot de potten vol zijn. Vul dan aan met het azijn mengsel tot bijna aan de rand. Sluit de potten goed, en zet ze op hun kop om de lucht eruit te halen. Na 5 minuten weer omkeren naar de gewone stand en laten afkoelen.
Variatie Tips:
Je kunt ook alle mogelijke variaties maken, maar kijk ook naar de kleurcombinaties, want dat maakt het ook nog eens leuk om de potten in de keuken te hebben. Je kunt dus worteltjes met selderij, wat partjes appel als je dit lekker vind en radijsjes samen doen. Ook kun je een groene pickle maken met courgette, prei en selderij en wat champignons bijvoorbeeld.
Lekker bij: Vlees, vis, bij een salade of erdoorheen, als apart gerechtje…
