Jamming!
Jamming betekend voor mij het creatief bezig zijn met iets wat je leuk vind. Jam maken valt daar ook onder tegenwoordig. Er is niets zo leuk om s’ochtends je eigen jam op een broodje of croissantje te smeren, of om een beetje in de yoghurt of over het ijs te doen. Het is een echte smaakmaker, die smaakt naar meer 🙂
Er is nog steeds veel lekker fruit, en dus kun je nu, ook na de zomer nog lekker jam maken. En op de markt kun je allerlei specerijen vinden, dus je kunt de zomer vast houden door de meest lekkere combinaties te vinden, in een potje te stoppen en te bewaren voor later!
Ik heb een aantal keren met jam maken geexperimenteerd. Gewoon met fruit en met suiker, maar daarvan heb ik gemerkt dat het niet altijd goed werkt, en het inkoken kost best veel tijd. Toen ben ik eens gaan googlen en heb uiteindelijk toch eens de geleisuiker geprobeerd die in de winkel te koop is.
Dit is DE uitvinding! Ongelovelijk, het gaat gewoon nooit meer fout!
Er zijn 2 versies, de gewone geleisuiker, en ook de halfzoete variant, waar iets meer gelei inzit en waardoor je de smaak van het fruit beter vasthoudt. Ik werk tegenwoordig met beiden, al naar gelang het soort fruit. Is het wat zuurder fruit, dan gebruik ik de gewone geleisuiker. Heb ik heel zoet fruit (ananas, rijpe aardbeien etc) dan gebruik ik de halfzoete versie maar doe er wel wat extra vanillesuiker bij of wat rietsuiker.

Hoeveelheid: 3 tot 4 potjes ongeveer
Bereidingstijd: 10 minuten
Kooktijd: 1 of 4 minuten
Wat heb je nodig:
1 kg fruit (1.250 kg voor de halfzoete variant)
1 kg geleisuiker (Van Gilse) en 500 g voor de halfzoete variant
Smaakmakers zoals bijvoorbeeld steranijs, tijm, kaneel
En verder:
Een staafmixer
Schone, gesteriliseerde potten
Hoe maak je het:
Was het fruit. Maak er sap van als je gelei wilt, pureer het als je meer een spread wil hebben, of snij het in kleine stukjes.
Steriliseer de potten door ze in kokende water met een schep soda 10 minuten te laten koken (deksels ook). Daarna goed met heet water afspoelen en op hun kop op een schone theedoek zetten tot gebruik.
Doe het mengsel in een pan, en voeg de geleisuiker toe. Voeg eventuele smaakmakers toe, en laat het aan de kook komen. Kook het 4 minuten door (1 minuut voor de halfzoete jam) en doe het in de van te voren gesteriliseerde potten. Vul de potten zo vol mogelijk en doe het deksel erop. Zet daarna de pot 5 minuten op zijn kop zodat alle lucht eruit verdwijnt.
Variatie Tips:
Je kunt de leukste en lekkerste combinaties maken. De volgende heb ik al geprobeerd:
Rabarber met peer (half half) en steranijs (3)
Wilde perziken met steranijs
Pruimen met vanillesuiker
Framboos, aardbei en ananas
Aardbei met 1 eetlepel zelfgemaakte vanillesuiker en 1 banaan

Lekker bij:
IJs, brood, vla, yoghurt, croissantes, op de taart…
