Socca, als er iets is waar ik een vakantiegevoel bij krijg, dan is het dat wel. Het is een gerecht wat uit Nice komt in (Zuid Frankrijk, even voor de zekerheid). Ik heb hier lange tijd gewoond, en ik wilde eens kijken of ik het gevoel kon terug krijgen van die tijd daar, lopend over de markt, waarbij je Socca bij kleine winkeltjes (je hebt wel een hout oven nodig tenslotte!)  als een soort fast food kunt kopen! Het is zo lekker, dit MOET je echt proberen!

Ik heb in Frankrijk kikkererwtenmeel gekocht, maar ook in Nederland is dit goed verkrijgbaar. Kun je het niet vinden in de winkel (kijk bij de turkse winkels) dan is het in ieder geval goed online te kopen.

Het is heel erg simpel, maar wat hier belangrijk is is dat de oven heeeeel heet moet zijn, de bakplaat ook, en dat je dit eet met veel gemalen peper!

Kooktijd:

15 –  16 min in de oven bij 240 graden

Wat heb je nodig:

200 g kikkererwtenmeel

300 ml water

2.5 eetlepels olijfolie

1 theelepel zout

Gemalen peper (NIET uit de molen, want dat zijn te grote stukjes, gebruik de gedroogde zwarte peper, die is hier lekkerder bij)

En verder:

Oven voorverwarmd op 240 graden

Bakblik goed ingevet met olijfolie
Hoe maak je het:

Doe alles bij elkaar in een mengkom en roer tot je geen klontjes meer hebt. (Als je het zo proeft is dit deeg NIET echt lekker, maar maak je geen zorgen, dat komt nog!)

Ondertussen de oven voorverwarmen op 240 graden Celsius.

Na 10 minuten doe je de ingevette bakplaat hoog in de oven, en laat je hem voor nog 10 minuten meewarmen.

Roer het deegmengsel nog even door (ziet eruit als een soort pannekoekendeeg)
en giet het op de bakplaat. Het moet minstens 5mm dik zijn want anders wordt het hard en dan krijg je niet die knapperige dikte die je hier wilt hebben.

Bak voor 15 – 16 minuten. Het moet goudbruin zijn. Haal de Socca eraf met een spatel, en scheur het in stukken. Veel peper erover, en eet smakelijk!\
